Prep Time: 25 minutes
Total Time: 25 minutes
Ingredients:
- 2 cups sugar
- 4 teaspoons water
- 1/3 cup white vinegar
- 1-1/2 cups dry roasted peanuts
- 1/2 cup sesame seeds, lightly toasted
- 2 tablespoons freshly cut chives
Preparation:
Cover table surface with newspapers covered with waxed paper. In a large heavy saucepan, mix sugar, water and vinegar over low heat. Once sugar dissolved, stop stirring. Allow mixture to come to a boil. Continue to cook for about 10 minutes until mixture is golden and reaches hard brittle stage or 300 degrees F. on candy thermometer.
Quickly add peanuts, sesame seeds and chives to pan. Stir and scoop out onto prepared tabletop*. Allow to cool complete and store in airtight container.
*If you’d prefer squares. Grease a large pan with sides (11x7). Sprinkle half the sesame seeds, all of the peanuts and chives. Carefully, pour hot mixture over top. Spread with buttered spatula. Sprinkle rest of sesame seed over top. Cut into squares while candy is still warm.
