Ah, spring is finally here with its chirping birds, blooming flowers and cakes. Yes, cakes. Springtime just says light and creamy cakes to me. Can't you just see ladies dressed in their springtime fashions eating petite pieces of delectable cakes served on the finest china along with a cup of tea?

1. Mandarin Orange Cake a.k.a. Pig Pickin' Cake

This cake is so light and airy. It's amazing how simple it is to make too.
