This recipe for Gingerbread Cake is the perfect snack cake for anytime of year.

Ingredients:
- 2-1/2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cloves*
- 1/2 teaspoon nutmeg*
- 1-1/2 teaspoons cinnamon*
- ----
- 1/2 cup butter, softened
- 2/3 cup packed brown sugar
- 1 cup molasses
- 2 eggs
- ----
- 1 cup boiling
- ----
- 1 tablespoon freshly grated ginger, optional
- ----
- powdered sugar
- ----
- whipped cream
Preparation:
Preheat oven 350 degrees F. Grease and flour 9x13 pan. In a medium bowl, combine first ingredients with wire whisk. In large bowl, cream butter. Add in powdered sugar and combine. Add molasses. Combine completely. Gradually add wet ingredients to dry ingredients alternately with boiling water. Mix until smooth. Hand stir in freshly grated ginger. Bake for 30 to 35 minutes or until tested done. Cool completely in pan or wire rack. Sprinkle with powdered sugar before cutting into squares. Serve with whipped cream.
Makes 24 squares.
*May substitute with 2-1/2 teaspoons Pumpkin Pie Spice, Apple Pie Spice or Mixed Spice
