Earthquake Cake is not the prettiest cake you'll ever make, but it might be the tastiest.

Yield: 16 to 20 Servings
Ingredients:
- 1 cup coconut
- 1 cup chopped pecans, lightly toasted
- ---
- 18 ounce German Chocolate cake mix
- 1-1/4 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- ---
- 8 ounces cream cheese, softened
- 1/2 cup butter, softened
- 1 teaspoon vanilla
- 1 pound powdered sugar
Preparation:
Preheat oven to 350 degrees F. Grease 9x13 baking pan. Sprinkle pecans and coconut over bottom of pan. Mix together cake mix, water and eggs. Beat with an electric mixer for 2 minutes. Carefully, pour batter over coconut and nuts. Mix together cream cheese and butter. Mix in vanilla. Gradually add powdered sugar until well combined. Drop cream cheese mixture over batter using a big spoon. Don't stir. Bake for 45 minutes.
