Yield: 12 to 16 servings
- 12 ounce package vanilla wafers
- 1 cup butter, room temperature
- 6 eggs
- 1/2 cup milk
- 1-1/2 cups flaked coconut
- 1 cup chopped nuts, lightly toasted
Preheat oven to 350 degrees. Grease and flour bundt cake or angel food cake pan. Finely crush vanilla wafers in food processor. Set aside. Cream butter and sugar. Add eggs, one at a time until well combined. Add wafers to butter mixture alternately with the milk until well mixed. Hand stir in coconut and nuts. Pour mixture into prepared pan. Bake for 1 to 1-1/2 hours or until done. Cool in pan on wire rack for 15 minutes. Remove from pan and finish cooling on rack. Serve Nutty Vanilla Wafer cake with whipped or ice cream, if desired.
