Over-the-Top Brownies

I'll admit it. I was being lazy when I came up with this recipe. Times were tough and I needed chocolate, a lot of chocolate. I decided to make a Scotch Chocolate Cake, only I didn't have enough cocoa powder to make both the cake and the frosting. Then, I thought I could use a cake mix with the frosting. Guess what else I didn't have? You guessed it. I didn't have any cake mixes, but I did have a brownie mix. These brownies are so decadent, which is why I've gotten tons of compliments on these Over-the-Top Brownies.

Warning: This recipe is loaded with chocolate. Be sure to cut these brownies in small pieces.

Prep Time: 40 minutes

Cook Time: 2 minutes

Total Time: 42 minutes

Yield: 48 pieces

Ingredients:

  • 1 brownie mix or recipe, prepare as directed in a 9x13pan
  • 1/2 cup butter
  • 4 tablespoons cocoa powder
  • 6 tablespoons milk
  • -----
  • less than 1 pound box of powdered sugar
  • 1 teaspoon vanilla
  • 1 cup chopped nuts, lightly toasted
  • 1 cup flaked coconut

Preparation:

When brownies are almost done baking, make the icing.

Bring butter, cocoa and milk to a boil in same pan from above. Stir to prevent burning. Remove from heat and add the sugar. Stir in as well as possible and then add the vanilla. Mix until sugar completely melted and mixed in. Stir in rest of ingredients. Spread on hot brownies. Once cool cut brownies into 48 pieces (6 pieces by 8 pieces).
