Gloria's Scottish Shortbread

I can always make shortbread as I always have flour, sugar and butter on hand in my kitchen.

Shortbread tastes great with a cup of tea.

Gloria says the secret to making good shortbread is mixing the ingredients with your fingers.

Prep Time: 25 minutes

Cook Time: 30 minutes

Ingredients:

  • 5 cups flour, measured after sifting
  • 1 cup (plus) sugar
  • 1 pound (2 cups) butter, cold, no substitutions

Preparation:

Preheat oven to 350 degrees F. Put flour and sugar in large bowl. Cut or grate butter into same bowl. Mix with fingers until resembles bread crumbs. Pat evenly in a 10x15-inch baking sheet with sides. Bake for 25 to 30 minutes or until light brown. Remove from oven and sprinkle with sugar. Cut into 2-inch squares while still hot and soft. Cool completely in pan. Store in airtight container.
