Sweet Potato Pie with a Streusel Topping

Get the best of both worlds with this Sweet Potato Pie topped with a Streusel Topping.

Prep Time: 25 minutes

Cook Time: 35 minutes

Ingredients:

  • 9-inch unbaked pie crust
  • 1-1/2 cups mashed sweet potatoes (about 1 pound uncooked)
  • 3 eggs
  • 1 cup evaporated milk
  • 3/4 cup light brown sugar
  • 1/2 cup dark corn syrup
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon*
  • 1/2 teaspoon nutmeg*
  • 1/2 teaspoon ginger*
  • 1 teaspoon salt
  • Streusel Topping:
  • 2 tablespoons flour
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons butter, cold
  • 1/2 cup coarsely chopped pecans

Preparation:

Preheat oven to 425 degrees F. Prick pie crust with a fork. Pre-bake for 15 minutes. Remove from oven. Lower oven temperature to 350 degrees F. Mix sweet potatoes, eggs, evaporated milk, brown sugar, corn syrup, butter, vanilla and spices. Combine completely. Pour into crust. Bake for 20 minutes. Using a pastry blender to combine all streusel ingredients except nuts. Stir in nuts. Spread over pie filling. Bake for 10 to 15 minutes longer. Cool on wire rack. Serve with whipped or ice cream. Serves 8 - 10 people.

*May use 1-1/2 teaspoons of pumpkin pie spice instead.
