Sawdust Pie

  • 9-inch pie shell
  • 1-1/2 cups coconut
  • 1-1/2 cups graham cracker crumbs
  • 1-1/2 cups pecans, chopped
  • 1-1/2 cups sugar
  • 1 cup egg whites (apprx. 6 - 7 eggs)


Preheat oven to 450F. Line pastry-lined 9-inch pie plate with double thickness of foil. Bake 8 minutes. Remove foil. Bake 4-5 minutes more or until golden. Cool. Reduce oven temperature to 350F. In large bowl, combine coconut, graham cracker crumbs, pecans and sugar. In another bowl, beat egg whites just until foamy, add to coconut mixture, and mix well. Pour into prepared pie shell. Bake, uncovered, 35 minutes or until set. Makes 8 servings.

This is an awesome pie. I put sliced bananas over the top and spread a layer of homeade whipped cream over the layer of bananas. The bananas and whip cream really compliment this pie.
