Rustic Cherry Pie

Cook Time: 25 minutes

Ingredients:

  • 2 cups fresh pitted cherries
  • 1/2 cup water
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • single unbaked pie crust
  • 1 egg
  • granulated sugar

Preparation:

Cook cherries and water in saucepan for 10 minutes. Stir together sugar and cornstarch. Blend into cherries. Cook until thickened, 5 minutes or so. Remove from stove and set pot on wire rack. Cool for 10 minutes. Preheat oven 425 degrees F. Line side-less baking sheet with foil. Turn sides of foil up to catch any drips. Place pastry on foil. In small bowl, beat egg with fork. With a pastry brush, paint entire topside of pie crust. Carefully, spoon warm cherry filling into middle of pie crust allowing for a 2-3 inch boarder of pastry. Fold pastry up around filling. Brush upturned sides with the rest of the raw egg. Sprinkle with granulated sugar. Bake for 25 minutes or until bubbling. Once cool, slide Rustic Cherry Pie onto serving dish. Use a knive or pizza cutter for slicing wedges. Serve with whipped cream or spinkled powdered sugar.

Makes 6-8 servings.
