Aileen said that this Ritz Pecan Pie was the only Pecan Pie she knew growing-up. It wasn't until she moved south that she realized that this recipe wasn't the same as a Southern Pecan Pie. She still prefers this recipe, as it's not as sweet.

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Ingredients:

  • 22 to 25 Ritz Crackers (round-buttery crackers)
  • 3 egg whites
  • 1 cup sugar
  • 1 cup pecans, lightly toasted*
  • 3/4 teaspoon baking powder

Preparation:

Preheat oven to 350 degrees F. Grease 9-inch pie plate. Either use a food processor or zip-lock bag and rolling pin to crush crackers. Beat egg whites until stiff. Fold in cracker crumbs and rest of ingredients. Put into pie plate. Bake for 25 minutes. Cool Ritz Pecan Pie on wire rack.

Notes in the Margin:

*Although, it's not necessary to toast the pecans in this recipe, I prefer the stronger nut flavor.
