Lemon Chess Pie

Prep Time: 25 minutes

Cook Time: 30 minutes

Ingredients:

• 3 eggs, beaten until light
• 1-1/2 cups sugar
• 1-1/2 lemons, juiced
• grated rind of 1 lemon
• 3 tablespoons butter, melted
• 1/2 teaspoon salt
• 1 pastry shell, unbaked

Preparation:

Preheat oven to 350 degrees. Combine first 6 ingredients and pour into the pastry shell. Bake for 25-30 minutes.
