You get just the best peaches in the summertime. This recipe for Peach Pie was made with Georgia peaches. Fresh Peaches make the very best Peach Pie.

I served this pie with homemade vanilla ice cream.

Prep Time: 25 minutes

Cook Time: 1 hour

Total Time: 1 hour, 25 minutes

Yield: Makes one 9-inch Pie

Ingredients:

  • Double pastry crust
  • 6-8 peaches, washed, peeled, pitted and sliced*
  • 2 teaspoons fresh lemon juice
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon ground ginger**
  • 1/4 teaspoon ground cinnamon**
  • 1/3 cup flour
  • 1/2 teaspoon salt, optional***
  • 2 tablespoons cold butter
  • 2 tablespoons (apprx.) milk
  • 2 tablespoons (apprx.) granulated sugar

Preparation:

Preheat oven to 425 degrees F. Place a large cookie sheet on rack to catch pie drippings. Line the bottom of 9-inch glass pie plate with pie pastry. In a large bowl, place peach slices add lemon juice and stir. In a small bowl, combine 1/2 cup each granulated and brown sugar with ginger, cinnamon, flour and optional salt. Once combined, add to bowl of peach slices. Mix completely. Pour into prepared pie plate. Spread butter pieces over peaches. Either top the peaches with a lattice crust or top with the remaining uncut pie pastry. Vent crust. Paint with milk and sprinkle with sugar. Place on cookie sheet in the oven. Bake for 10 minutes. Reduce heat to 350 degrees and bake for another 40 to 50 minutes. Cover edges if needed. Remove from oven and cool on wire rack. Serve with either whipped or ice cream.

Notes in the Margin:
* The number of peaches depend on the size of the peach and your pie plate. If you use a deep dish pie plate, you will need more peaches. I used a regular pie plate and wish I used more peaches. I only used 6 and could have easily used 8. It all depends on the size of the peach. To be on the safe side, buy 10 peaches. You can always carefully stir the extra slices in the mixture in the pie plate. Plus, your pie will look much better with peaches mounded in the middle.
**I happen to like the combination of ginger and cinnamon. You may not. Please feel free to use all ginger or all cinnamon.
***If you have very flavorful peaches, you won't need the salt. The salt will bring out the peach flavor.
