These are the wonderfully, hard Italian cookies that are served with coffee. You have to eat these cookies with coffee, or some other liquid, because they should be dunked to soften them. Baking these cookies twice is how they get hard. In fact, that is what Biscotti means: twice baked. It's amazing to me how much restaurants charge for these cookies because they are very easy to make.
