Waffles are two-sided honeycombed breads that can be served for breakfast or for dessert. There are also recipes that use unsweetened waffles with savory dishes. I prefer my waffles either covered with syrup or whipped cream.

Waffles are made with an appliance called a waffle iron. Waffle irons have grids.  The irons come in two parts, a top and a bottom, which are hinged together. The batter is poured on the bottom grid and the top is then closed down over the bottom. Waffle irons can be found in various shapes and sizes. The most common irons make four 4-inch square waffles. Irons that make big round waffles are generally called Belgium Waffle makers. You can also find waffle irons that form waffles into cartoon character shapes.

The batter used to make waffles is basically made with flour, eggs, milk and sugar. Baking soda, yeast or stiffly beaten egg whites are typically added to make a fluffier waffle, like the Belgium waffle. A Belgium waffle is made with about 3/4 cup of batter where as a traditional square one needs about 2/3 cup. When making waffles keep in mind that homemade batter typically takes longer to cook than packaged mixes.

Some quick tips for making great waffles are:

1. Don't over mix the batter unless the recipe directions say otherwise.

2. Don't open the waffle iron during the first minute of baking. The grids won't be formed properly.

3. If there is steam still coming out of the iron, the waffle is still cooking.

4. Waffles are the perfect food item for the freezer. Freeze them in resealable bags after they are completely cool. Reheat them in the microwave or the toaster.
