The Definitive Substitution and Equivalency List

Here's the list you need to print and attach to your refrigerator or put in the front of your favorite cookbook.

Please keep in mind, even though these are common substitutions; they may not give you the desired result the creator of the recipe intended.

1 cup (c.) whole milk
1/2 c. evaporated milk and 1/2 c. water
or
1/2 c. condensed milk and 1/2 c. water (reduce sugar in recipe)
or
4 tablespoons (T.) powdered milk and 1 c. water
or
4 T. nonfat dry milk plus 2 teaspoons (t.) shortening and 1 c. water

1 c. sour milk
1 c. sweet milk and 1 T. lemon juice or vinegar
or
1 c. sweet milk mixed with 1 T. lemon juice or with 1 T. vinegar or 1 3/4 t. cream of tartar

1 c. sweet milk
1 c. sour milk or buttermilk plus 1/2 t. baking soda

1 1-ounce (oz.) square unsweetened chocolate
