Passover, an 8 day celebration for Jews, begins with the Seder. The Seder is a traditional meal that includes matzo,
gefilte fish with horseradish, hard-boiled eggs in salt water, and wine. Prior
to and during the meal, there are prayers and the retelling of the story of the
Israelites' escape from slavery in Egypt during biblical times.
The challenge in making desserts during Passover is keeping kosher. Part of
keeping Kosher is the avoidance of flour (except matzo) and any foods that
contain leavening agents, like yeast and baking soda. (These products are
forbidden in remembrance that the Israelites had to leave Egypt so fast that the
bread did not have time to rise.) Some Jews may also avoid cornstarch, corn
syrup, legumes and extracts made with grain alcohol.
