Carrot Cakes
Dateline: 02/02/99Ah, carrot cakes, don't you just love them? I do. In fact, I just took one to a friend who had a baby girl last week. We were joking about how I knew she would rather eat dessert than regular food. That's when the realization hit me. Carrot cake is more than just another dessert full of empty calories.
Think about it. What is in a carrot cake? Carrots are a vegetable. Most recipes also call for a fruit like pineapple. So now you have a vegetable and a fruit. Cream cheese provides protein through milk. Nuts provide protein, too. Flour is the basis for bread. What's left but butter and sugar. Both of those are important to our diet, too. A recipe for carrot cake sounds like it was created with the Food Pyramid in mind.
So when you make (and eat) your next carrot cake, keep in mind, you're eating a healthy dessert!
