Lemon Sponge

Best Old Fashioned Baking Recipe Contest Winner

3 tablespoons soft butter
1 cup sugar
4 tablespoons flour
pinch salt
juice of 1 lemon
rind of 1 lemon
3 eggs, separated
1 1/2 cups milk

Beat egg whites until stiff. Beat egg yolks. Cream the butter and sugar together; add flour and salt.  Add the lemon juice and rind.  Stir in the beaten egg yolks and milk.  Fold in the egg whites.  Pour into pudding pan, set in pan of hot water and bake 45 minutes.
