Natchez-Under-The-Hill Orange Pecan Waffles
Adapted from The Show Boat Cookbook by June Jackson, 1996

1/2 C. toasted pecan pieces
1-1/3 C. flour
2 T. sugar
4 t. baking powder
1/2 t. salt
2 t. grated orange peel
2 extra-large eggs
1/4 C. unsalted butter, melted and cooled
1-1/2 C. club soda

In food processor, combine pecans, flour, sugar, baking powder and salt until finely ground. Put mixture in large bowl, add orange peel.  In another bowl, beat eggs and butter. Add to dry ingredients along with club soda. Mix thoroughly. Cook immediately on prepared waffle iron.

Makes 4 servings.
