Butterscotch Pudding
2 cup brown sugar
3 tablespoons cornstarch
4 cups milk
1/2 teaspoon salt
1 teaspoon vanilla
Melt butter in double boiler. Stir in brown sugar. Dissolve cornstarch in 1 cup milk. Add to butter mixture along with rest of milk. Cook until thick. Stir in salt and vanilla. Pour into individual serving bowls. Serve warm (my favorite way) or cool.
