Orange Snow Pudding

1 envelope Knox gelatin
1/4 C. sugar
4 egg whites, at room temperature
1 C. orange juice
2 T. lemon juice
dash salt

1.  In saucepan sprinkle Knox over orange juice, to soften, about five minutes.

2.  Bring to a boil, remove from heat.  Add   tablespoons sugar, stir to dissolve; pour into medium size bowl.

3.  Add lemon juice, stir.  Set bowl in bowl of ice, stir occasionally, about 10 minutes.

4.  In medium bowl beat egg whites and salt until foamy, gradually add remaining sugar (2 tablespoons).  Beat until soft peaks form.  Now beat Knox/orange juice mixture until foamy.  Fold egg whites into Knox/orange juice. Blend thoroughly but gently.  Pour into 4 cup mold.   Refrigerate 2 hours.  Delicious!  Only 50 calories per serving.
