Serves 6.
1-1/2 T. plain gelatin
1-1/4 C. water
1/2 C. sugar
1/8 t. salt
1/2 t. cinnamon
1 apple, grated
3 T. lemon juice
2 egg whites, stiffly beaten
Combine gelatin, water, sugar, salt and cinnamon. Heat over medium heat until gelatin and sugar are dissolved. Cool until syrupy. Stir in apple and lemon juice. Chill until partly set. Beat mixture with rotary beater until frothy. Fold in egg whites. Pour into a 1-1/2 quart mold. Chill until firm.
Unmold and serve with cream or custard sauce.
