Pumpkin Pancakes

2 cups all-purpose flour
2 tablespoons packed brown sugar
1 tablespoon baking powder
1-1/4 teaspoons pumpkin pie spice
1 teaspoon salt
1-3/4 cups milk
1/2 cup canned pumpkin
1 large egg
2 tablespoons vegetable oil

In a large bowl, with a hand mixer, combine milk, pumpkin, egg and oil.  In another bowl, with a wire whisk combine flour, brown sugar, baking powder, pumpkin pie spice and salt.  Gradually add dry ingredients to wet.  Stir only until large lumps are absorbed.  Batter will be lumpy.

Heat griddle or skillet over medium heat; brush lightly with vegetable oil. Using 1/4 cup measurer to form each pancake on griddle.  Cook until top is bubbled and edges dry.  Turn and continue to cook for 1 or 2 minutes.
