Applesauce
adapted from the Good Housekeeping Cookbook 1973

2 pounds cooking apples, peeled, cored and sliced
1/4 t. cinnamon
1/8 teaspoon ground cloves
1 t. lemon juice
1/2 cup sugar

Heat 1/2 cup water to boiling.  Add all ingredients, except sugar, and return to boiling.  Reduce heat to low; cover and simmer 8 to 10 minutes or until apples are tender.  Simmer 12 to 15 minutes for a smoother applesauce.  Stir in sugar during the last few minutes of cooking.  Makes 4 cups.
