adapted from the Florida Citrus Cookbook, Marmac Publishing Company, Inc.
- 4 large oranges
- water
- 2 cups granulated sugar
Peel oranges and cut peel into thin slivers. (Save orange segments for another use.) In a 2-quart saucepan, put peel and cover with water. Boil on high for 5 minutes. Drain.
Put peel back in pan. Add sugar and 2 cups of water. Boil on moderate heat for 30 to 45 minutes until it's the consistency of syrup. Chill until ready to use.
Can be used as a dessert topping or as part of a fruit relish. I like it on waffles and egg rolls.
