Watermelon and Sake Sorbet

Ripe for Dessert is a cookbook with fruited dessert recipes by David Lebovitz, 2003.

4 cups seeded watermelon chunks (1-inch pieces)
2/3 cup sugar
10 tablespoons dry sake
Optional: Fresh Lime Juice

In a food processor or blender, whiz the watermelon chunks with the sugar and sake until smooth.

Taste, and if you wish, add a few drops of lime juice to adjust the sweetness to your liking.

Chill thoroughly, then freeze in an ice cream make according to the manufacturer’s instructions.
