Fried Apples

3-4 apples, peeled and sliced thin (I like Granny Smiths for this)
1 Tablespoon of butter
1/4 cup maple syrup
1/4 cup (packed) brown sugar
1 teaspoon cinnamon (or more, to taste)
1/4 teaspoon allspice
1/4 teaspoon freshly grated nutmeg
(If desired, curry powder makes a wonderful addition to this, use about 1/2 teaspoon)

In frying pan, melt the butter and add the apples. Stir and toss until apples begin to soften and turn brown. Add syrup, sugar, and spices, and cook until thickened and bubbly. Serve over Pancake.
