Baked Bananas

Straight from the Bahamas

A long time ago I had a friend who owned a house in the Bahamas. In her backyard was a banana tree. On cool mornings she would eat baked bananas for breakfast. Bananas baked in the peel give the fruit a slight lemony flavor. Try this recipe today, but don't be disparaged if the skin turns black. It's meant to do that.

Preheat oven to 350 degrees F. Place unpeeled banana on a foil-lined cookie sheet. Place in oven and cook for 15 minutes. Place on a plate, pull back the peel and eat with a spoon.
