Chocolate Surprise Cupcakes

2- 3 ounce packages of cream cheese, softened
1/2-cup sugar
1 large egg
6 ounces (1 cup) milk (not semi-sweet) chocolate morsels
1 Swiss Chocolate or Devil’s Food cake mix
1-16 ounce each creamy vanilla and chocolate containers of frosting
Sprinkles (optional)

Preheat oven to 350 degrees F. Line muffin pan with baking cups.

Beat cream cheese at medium speed until smooth; add sugar, beat well. Add egg, beat just until blended. Stir in chocolate morsels.

Prepare cupcakes according to package directions. Fill each cup 2/3 with batter. Add a scant tablespoon cream cheese mixture to each cup.

Bake for 19 to 21 minutes. Use a toothpick to test doneness. Cool in pans for 5 minutes on wire rack. Remove from pans and continue to cool completely on wire racks.

Frost with desired frosting. Decorate with seasonal or regular sprinkles if desired.

Yield: 2-1/2 dozen
