Grandma's Pineapple Cookies

3-1/2 cups flour
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 teaspoon baking soda
1 cup butter or solid shortening
1-1/2 cups sugar
1 egg, slightly beaten
2 teaspoons pineapple or vanilla extract
1 cup crushed pineapple, not drained
1/2 cup coarsely chopped walnuts, toasted

Preheat oven to 350 degrees F. Grease cookie sheets. In a medium sized bowl, combine flour, salt, nutmeg and baking soda. Stir with a wire whisk. In a large bowl, cream the butter and sugar. Add the egg, extract and pineapple. Add the flour mixture and mix. Drop by tablespoonfuls onto cookie sheets. Bake to 10 to 15 minutes or until lightly golden brown. Cool on wire racks. Makes 2-1/2 dozen.
