Refreshing Lemon Bar Cookies

I know that lemons are a winter crop here in the United States, but I seem to crave them more in the summer. They're cool and refreshing. I have to have my iced tea with a lemon and I tend to crave lemon-flavored desserts like this recipe for Lemon Snowbars. They are one of my favorite bar cookies. They're kind-of famous too. Nancy Drew uses them to capture criminals in this 'tween DVD favorite.
