Tropical Carrot Cake

This photo does not all do this cake justice. People eat it so fast I can't be a decent photo of it.I didn't get to make this for Christmas, but I get to for New Year's. This recipe for Tropical Carrot Cake is so good that I've had houseguests ask for pieces for breakfast. That can't be too bad, can it? It's almost healthy if you look at the ingredients. There are carrots (a vegetable), pineapple, coconut (2 fruits), cream cheese, eggs and nuts are all good sources of protein. If you don't count the sugar, this recipe for Tropical Carrot Cake could be considered almost "good-for-you." Well, if it's not good for your body, then it's at least good for your soul.
