Lemon Kok

Wednesday April 21, 2004
"When I was in Tarpon Springs, Florida, we stopped to enjoy some of my favorite Greek pastries at a bakery called: Hellas Bakery. One of the really enjoyable desserts I had was the Lemon Kok (pronounced coke). It was an two-person (4-inch?) 2-layered cake. The cake was similar to a vanilla sponge cake. In between the layers, and on the outside was a cream-type icing. On the very top was a topping something similar to lemon curd. There were other flavors like chocolate and cherry. What light and creamy cakes. Mine was wonderful! So, does anyone have a recipe or ideas to make such a cake? Please post your answers in the forum.
