Cold Out of the Fridge

A couple of years ago our neighbors had so many guests over the holidays that some of them had to stay at our house. For dessert one evening we served Tropical Carrot Cake. It was a big hit. One of our guests even wanted some, cold out of the fridge, for breakfast with a cup of coffee!
